Pumpkin Roll



3 eggs
1 cup sugar
2/3 cup pumpkin
1 tsp lemon juice
3/4 cup flour
1 tsp baking powder
2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp salt
chopped pecans

Filling:

1 cup powdered sugar
8 ounces cream cheese
4 tablespoons soft butter
1/2 tsp vanilla

Beat eggs on high for 5 minutes.
Gradually beat in sugar, pumpkin, and lemon juice.
Mix the rest of the regular ingredients.
Spread on greased 15 X 9 inch cookie sheet and top with nuts.
Bake at 350 degrees for 15 minutes. Turn out on towel that has been sprinkled with powdered sugar.
Start at narrow end and roll cake and towel together.
Let cool for 1 hour.

FILLING:

Mix all of the ingredients together.
Unroll cake part and spread filling evenly over.
Roll back up without towel.

Yummm... we are making a pumpkin roll this year too :) I just wanted to stop in and say Happy Thanksgiving to you and your family! I am sure it's wonderful to have your son home with you during the holidays now. Huggs

The mennonites make these and they are $7 but so good I have been known to swallow one whole!!!
